Our micro distillery is located in Fort Collins, Colorado, at the foothills of the Rocky Mountains from where we get our pristine alpine water. We use four small hand-crafted American made copper pot stills. We have over 50 different still configuration options. We ferment our batches for up to 3 weeks to allow maximum flavor profile. Our slow distillation process increases reflux and our smaller cuts offers a much smoother spirit. Only the finest American & European oak casks are used to age our premium craft spirits. We also use up to 9 other types of woods for maturation. We are one of the few distilleries in the world to operate this way and are at the forefront of distillation and maturation process. We’re also one of the micro distillery which produces the most types of spirits in the world today. All of our spirits are masterfully crafted by renowned industry experts for your enjoyment. Socially Responsible Operations
We at NOCO Distillery believe in doing business that benefits not only us but the rest of the community as well.
We outsource what processes we can to other local companies. For instance, we contract our wash to local breweries and complete the fermentation in our distillery. This is not only efficient but also produces more work for the local community.
As much as possible, we also source raw materials from local producers. Much of the botanicals and fruits we use in our craft spirits are produced right here in Colorado. This does not only reduce our operation's carbon footprint; locally sourcing raw materials means a shorter distance to travel and thus lesser fuel consumption. This also maximizes our positive impact on the local economy. Buying local increases the income of local producers. This, in turn, provides locals with more work opportunities, directly or indirectly increases' locals' spending power (which boosts the local economy even more), and increases the government's tax earnings. The Colorado proud way.
We also believe doing business and protecting the environment need not be mutually exclusive. Thus, we try to reduce our operation's impact on the environment. We recycle or reuse most of everything we use in crafting our premium spirits. We also strive to be energy efficient; for instance, we use heat exchangers so that we can preheat succeeding batches. This reduces our overall energy consumption by almost 33%. We also use a close circuit cooling system with water reclaimed from our Reverse Osmosis system.
Finally, we strive to use organic and/or Non-GMO raw materials when possible. This of course depends on availability from our suppliers and will be indicated on our bottles.
ROCKY MOUNTAIN Water
The Rockies are a mountain range formed through the subduction of tectonic plates millions of years ago. It is more than 3,000 miles long and is located at the western part of the North American continent. The Rocky Mountains are shared by Canada and the United States, stretching from British Columbia to New Mexico.
The Rocky Mountains play a very important role in Colorado's craft beer industry. It supplies clean and clear spring and runoff water that Fort Collins brewers swear by. It is this water from the Rocky Mountains that brewers often credit for their beers' award-winning taste.
Noco Distillery is using the same high-quality Rockies water in its craft spirit distillation. And we're sure this very same Rocky Mountains water that gives so much character to Coloradoan brews gives our premium craft spirits an edge in taste and flavor.
NOCO Distillery's in-house experts strive for perfection for they must produce only craft spirits that deserve their name. And we are glad to say that our whiskeys, gins, rums, vodka and Brandy (Eau-de-Vie) are deserving of such honor. We currently produce over 30 different spirits.
We distill our whiskeys in small batches. They are aged in new or used 5, 10 or 15 gallon American oak barrels. We produce traditional American whiskey, single malt whiskey, blended whiskey, Bourbon whiskey, rye whiskey, peated whiskey and a new make (moonshine) called Trailershine®.
Our gins are made differently from the traditional way. We distill each ingredient separately. Then we blend. This way, we consistently get the perfect gin every time. We say or Gins with an "s" because we offer 3 different styles of Gin to choose from. London Dry Gin, NOCO Saffron Gin & Rose Gin.
Rums (Cane (Organic), Black Pearl Select, Caribbean Fancy, Black Pearl Dark molasses)
Our rums are made from a variation of sugar cane and molasses. We make a Black Pearl Select Clear Rum. Our brown/aged rums are aged in the very same 5-gallon oak casks previously used to age our whiskeys. We ferment and distill 4 different types of molasses.
Vodkas (Organic Wheat - Gluten Free)
We produce numerous vodkas. A Premium & Super Premium Vodka. Our “house” vodka is distilled at least 5 times and filtered through custom filtration tubes. To ensure its purity, our Super Premium Vodka which is distilled a minimum of 7 times, travels an equivalent of 1 mile or 1.6km during this repeat filtration process and is bottled at 55% ABV (110 Proof).
We also produce a Summer, Winter Black Truffle Vodka as well as a White Truffle (Alba) Vodka limited to 100 bottles per year.
Botanical Collection - Vodka infused with Botanicals
Cinnamon, Coriander, Elderberry, Ginger, Grains of Paradise, Lemon, Lemongrass, Mango, Orange, Pineapple, Star of Anise, Rose, Rose Hip and Vanilla.
Brandies - Eau-de-Vie
We offer apple, grape eaux-de-vie as well as barrel aged brandies. Thanks to our smaller stills we can easily produce micro batches.
We produce once a year a "Bleue", the original style absinthe from an 4th generation family recipe. Clear in color, it turns whitish blue when water is added to it where it gets its name "La Bleue" from.
Blue Agave Spirits - Tokilya® - Organic
We will produce a 100% Blue Agave Spirit. A Blanco (clear) as well as a Barreled and “Añejo” style versions.
We also produce a 50% Blue Agave & 50% Cane Spirit. A Blanco (clear) as well as a Barreled and Añejo style versions.
Once a year, we produce a Aquavit, made from 100% Organic Wheat neutral grain spirit and aged for up to a year in small 5 gal ex bourbon barrels.
We produce a clear & barrel aged Orange Liquor as well.
WHY Fort Collins?
Fort Collins is situated on the foothills of the Rocky Mountains, and the "Wild and Scenic River" of Cache la Poudre (with a reputation for great whitewater rafting) runs through it. It is home to Colorado State University, it is the seat of Larimer County and, in terms of population, it is Larimer County's largest municipality.
Fort Collins is perhaps best known for being the "Craft Beer Capital of Colorado." Twenty plus breweries call it home. Additionally, approximately 70% of all beers produced in Colorado come from Fort Collins.
And soon - through the many local craft micro distilleries such as ours - we hope to put Fort Collins on the map of one of the America's great craft spirit distillation capitals as well.

Our Speakeasy & tasting room has a unique vibe. We are located in the industrial area of Fort Collins off of S. Link Lane.
Groups are welcome. Please note that our tasting room occupancy is for 12 people only at this time and we do not recommend more than 6 people for a tasting session for best experience.
